Hong Kong flag carrier Cathay Pacific takes its partnership with Michelin-starred local restaurant Duddell’s to the next level with new ‘Hong Kong Flavours’ menu offerings for first and business class passengers departing Hong Kong on long-haul services.

Following the launch of its collaboration with Duddell’s in February 2023, oneworld member Cathay Pacific has once again worked with the restaurant to present the next iteration of menus showcasing authentic Cantonese and regional Chinese specialties along with classic comfort dishes.

The latest menus are amongst a series of collaborations with acclaimed local restaurants and brands that Cathay hopes will deliver on its commitment to provide customers with thoughtfully curated dining experiences.

First class

New first class appetisers include crystal pork terrine with black vinegar, inspired by a specialty dish from Zhenjiang in China’s Jiangsu province. This dish is made with pork knuckle that has been cured, boiled, pressed and thinly sliced, then topped with a sweet and tangy sauce made with aged Chinese black vinegar.

Moving on, customers can choose from a variety of main courses including sautéed abalone and chicken with Sichuan pepper and crispy greens; and steamed cod fillets with Chinese ham and shiitake mushrooms.

The meal concludes with a black sesame tart with tofu ice cream, which draws inspiration from the popular Chinese sweet black sesame soup.

Business class

In business class, customers may opt for Sichuan-style poached chicken with sesame and chilli sauce, a starter also known as “saliva chicken”.

The mains include braised pork ribs with hawthorn sauce and green apples; and braised beef ribs with port wine.

For dessert, the Duddell’s menu offerings include tofu pudding with red beans sourced from Hokkaido.
