SIA to serve Peranakan food

Singapore Airlines (SIA) will serve heritage cuisine from the Lion City starting next month as part of the city-state’s 50th anniversary celebrations.

Singapore’s national carrier has partnered with one of the country’s renowned culinary personalities, Shermay Lee, to develop iconic Peranakan favourites based on the chef’s own family recipes.

Nonya Nasi Lemak
 
Peranakan” is Malay for “locally born” and refers to the descendents of early Chinese immigrants who intermarried with locals along the Malay Archipelago, including Singapore.

Ayam Tempra
 
The colourful Peranakan cuisine combines techniques and ingredients from Chinese, Malay and European cooking, which complements Singapore’s multi-cultural image.

“Singapore Airlines is committed to using authentic ingredients, which are the same ones I use at home. This is how we are able to re-create the same delicious flavours, even at 35,000 feet,” said Lee.

Hokkien Mee Soup

From July to September 2015, passengers on selected flights in suites, first class and business class can pre-order several Peranakan main courses via SIA’s Book the Cook service.

Bakwan Kepiting
 
Signature main dishes include Nonya Nasi Lemak (fragrant coconut-flavoured rice), Ayam Buah Keluak (chicken pieces with Kepayang nuts), Nonya Nasi Padang (steamed rice served with combination of dishes from Padang), and Hokkien Mee Soup (noodles cooked in prawn-flavoured stock), while those in suites and first class will also be served soups such as Bakwan Kepiting (crab soup) and Pork Rib Soup.

Ice cream wafer sandwiches
 
Premium customers can also get their hands on one of Singapore’s favourite desserts – an ice cream wafer sandwich, which comes in four flavours: Bandung (condensed milk with rose cordial), Gula Melaka (palm sugar), Pandan (from the Pandan leaf) and Sweet Corn.

Those in premium economy and economy can also look forward to Peranankan favourites such as Ayam Tempra (braised chicken) and Nonya Fish Curry.
