    Dingle is a picturesque town in County Kerry, located on the famous Wild Atlantic Way. The Skellig Hotel is on the coast with stunning views of the Atlantic Ocean.

    This, our first visit to the Skellig Hotel was to mark our niece’s wedding, and from the moment we walked into the hotel we were greatly impressed.

    There was a lovely area leading onto an outdoor patio which gave magnificent views over the Atlantic. There was a prosecco reception with chocolates, freshly baked shortbread. One of the staff members (John Joe) added a splash of blackcurrant liqueur to every second glass which made an amazing display….and tasted very nice indeed!

    Later, delicious warm smoked ham was served on crusty rolls.

    A very pleasant hour was spent chatting on the patio, taking in the views, and wondering if the meal would be as good as the first nibbles we enjoyed.

    The wedding reception room also overlooks the Atlantic which gives a stunning background to the event.

    The menu was very impressive:

    Dingle Skellig Tasting plate: Prawn Cocktail, Dingle Bay Fishcake, Locally Smoked Salmon

    Or

    Bouchee of Chicken & Field Mushrooms in a White Wine Cream.

    Seasonal Vegetable Soup
    Or

    Dingle Gin & Pink Grapefruit Sorbet

    **********

    Pan Fried Prime Fillet of Irish Beef, Chive Mash, Honey Roast Parsnip, Brandy & Peppercorn Cream

    Or

    Roast Monkfish, wrapped in Parma Ham, Wilted Greens, Vine Tomato & Basil Essence

    Or

    Pan fried supreme of Chicken, Apricot & Thyme Stuffing, Wild Mushroom Sauce

    All served with a selection of seasonal vegetables & potatoes.

    Apple & Cinnamon Pie
    Duo of Chocolate Mousse
    Vanilla Ice Cream, Tuille Basket

    Filter Coffee or Tea

    Mrs J & I made identical choices: Bouchee of Chicken to start, Soup followed by Supreme of Chicken. Each course was impeccably presented, generous in size and divine in taste. Others at our table chose differently, and every single dish was equally impressive.

    The large number of friendly, efficient and smartly dressed servers ensured that dishes were quickly cleared and the following courses served promptly.

    This was the best wedding dinner we have ever enjoyed: the quality of the food, the service, the surroundings were all impeccable. A three course dinner in the hotel restaurant with tea/coffee costs a very reasonable 45euro per person.

    Would we return to the Dingle Skellig Hotel: YES
