Thoughtful American Bistronomy opens in Phoenix Mall, Mumbai

‘American’ cuisine has been typically defined by visuals of cheesy pizzas, buckets of fried chicken, hot dogs, and hamburgers. With influences from immigrants who moved to this continent, this cuisine has adapted to modern food trends and is not limited to fast food. Bringing these diverse flavours and evolved gastronomy to Mumbai, TAB – Thoughtful American Bistronomy opens at Phoenix Mall, Lower Parel opens their doors.

Founded by Neha Pathan, the concept of TAB helms is from the idea of introducing present-day America through its chic cuisine and melting pot of global flavours, which is complemented by a Manhattan-inspired restaurant layout. TAB offers a thought-through, all-American modern bistro experience with gastronomical touches, hence the name – Thoughtful American Bistronomy.

Designed by architecture and design firm S+F Design, the concept of TAB takes the traditional American diner up several notches to transform it into a chic, sleek restaurant. The interiors depict a beautiful panoramic Californian landscape, with the pink and green colors being inspired by the breathtaking LA sunsets that paint the sky pink with a little tinge of Californian Greens. The texture of the walls gives a classic rustic look which is contrasted by the contemporary modern furniture that gives you a sense of opulence. The space has been developed to give diners an experience of both formal and informal living. The fresh, vibrant space by day lit with green planters transforms into a class, luxe vibe with upbeat jazz and new modern American music. Making diners feel comfortable and settled, the food does all the talking on behalf of TAB. Overall, the space strikes a fine balance between simplicity and complexity.

The menu has been curated by renowned chef Ajay Chopra, and combines a casual bistro with modern gastronomy i.e bistronomy. To complement the gourmet offerings, the bar offers a selection of exquisite concoctions such as Raspberry and Mandarin Bramble, an orange gin sour on crushed ice with a drizzle of raspberry; Encantado, a medley of sweet strawberry and tangy passion spiked with tequila; and New York Pine Pepper Sour, a bourbon sour with peppered pineapple touched by red wine.

“For years, American cuisine has had the misconception of being limited to burgers, fries, sandwiches, and all things fast food. While these items are native to this region, the cuisine has progressed vastly thanks to the evolving food trends and global gourmet influences. We wanted to bring this experience to Mumbai while still keeping the American roots intact, and we hope to do this with each plate and drink we bring forth at TAB.”, says Neha Pathan, Owner, of Thoughtful American Bistronomy.
