Restaurent etiquette (when food is returned)

    Interested to hear how people manage their expectations when food is delivered cold or undercooked in a Gourmet Restaurant…

    Would diners expect or accept:

    1. Food reheated without being re plated

    2. Food reheated and then re plated

    3. Food re cooked from fresh

    Please, no discussion on compensation or complaints.. purely on the etiquette of returning food and expectations of how it should be re served….

    Definitely 3. Nothing reheated.

    I might accept a steak that was undercooked and needed a couple of mins more.

    Agree with SimonS1. Depends what I was ordering. If it was meat that I thought was undercooked i’d be happy with a few more minutes on the flame.

    If it was overcooked/generally poor i’d like from fresh.

    of course , then you have to define what is gourmet, many claim to be but not.

    I rather think it depends on what exactly is cold and or undercooked. I agree about the steak, although not sure why someone would go in a gourmet restaurant and have a steak.

    The problem is for those your dining with, a freshly cooked dish will clearly put your meal out of kilter with everybody else’s. If it is not a protein, and is in fact just a side or veg I might just ask them to reheat it quickly and continue with the meal. However as said, the correct course of action for the restaurant is to start again from scratch. However, you as the customer have the right to ask for it to be rectified in a way that suits you.

    On the rare occasion (luckily) that I have sent food back, I always re-order and choose something else just to avoid the chance of a sneaky re-heat.

    Irrespective of type of restaurant I’d be expecting Number 3, unless I specified either of the other 2 as being acceptable to me at that point.

    For me, it would have to be what was undercooked, and as Mr Michael has pointed out, I’d need to factor in the consequences to my companions and the whole meal experience.

    Having said that, if I was in a Gourmet restaurant, paying gourmet restaurant prices and anything came back seriously undercooked that made it inedible (for me, who’d eat almost anything) I’d probably ask the waiter to retrieve our jackets !!

    As I once did, when freshly cooked chicken arrived piping hot and freezing cold!!
    And a wee tip, when ordering carnivore food, check out where the chef hails from, if he’s French and you order medium rare, chances are, a good vet could resituate the beast

    ……………or if the chef is Dutch and you ask for your steak rare, it will come out as well done.

    I had this exact scenario on Friday with a scallop dish which I sent back for being too cold only for the establishment to heat the same dish up and then serve rubbery scallops.

    The story behind the question;

    I was dining in a “Signature Restaurant” in a US hotel where main courses were in the region of $45-$60, starters around $12-$20…

    Eaten there several times and the food / service has always been excellent…

    The main courses came after a bit of a wait. The vegetables were hot, but 2 of the main dishes (and neither were slabs of meat or fish) were cold.. They were both tasted and had been cooked perfectly…

    I took exception to the fact that both plates were taken away, stuck under a grill (I am sure they would not have been microwaved) nothing was re-plated, and all of a sudden it looked dry and unappetising.

    I asked the maitre’d to re cook both and he gave me such a look…… but he did …

    When the he second attempt arrived, one dish came out virtually raw and the second totally without flavour….

    At that point we gave up…

    Interesting, I’ve just left a TripAdvisor review for the place I was in on Friday highlighting that it was a great shame the chef was so lazy as the scallop dish was very very good indeed until he reheated them.

    Like your experience, this place bills itself as a ‘fine dining’ establishment, charges were similar ($240.00 for two of us @ 2 courses, wine and aperitif) so having dishes redone should be a matter of course. I ate my reheated scallops as I couldn’t be bothered with the hassle of asking for another one…..but I told the waitress when we were done what I thought of rubbery and reheated scallops.

    Any reheated seafood dish such as scallops is frankly dangerous. Seafood is one of the prime causers of food poisoning. Reheating would not get me within a mile of it. Interestingly, I understand the risks of eating seafood reheated are so high that airline flight crew are forbidden to eat such dishes during a flight, although that may be an old wives tale.
