The word Scalae means steps in Latin and this is the name given to the fine dining Italian restaurant at The Thousand Kyoto. The hotel’s décor itself sets the tone for an extremely indulgent meal at this 110 cover restaurant. Following a glass of prosecco as an aperitif, I see a prosciutto trolley coming around that offers freshly sliced fine-quality prosciutto and condiments. This is followed by a classic Italian salad. Next arrived a round of pumpkin ravioli, with just the right dose of truffle for that extra zest. For mains, you could choose fish, duck or veal. I chose a beautifully textured sea bass, accompanied by an olive relish and mashed potatoes, which was an absolute treat for the sense thanks to its blend of flavours and textures. The fish was cooked to perfection.

With each course, the sommelier comes along and recommends a different wine to match.

Dessert was a classic tiramisu which was impeccable on all fronts.
