Tucked away in a discreet corner of Grand Hyatt Singapore, hidden from the hustle and bustle of Orchard Road is this chic eater, with an extensive Western and Asian menu. What characterises mezza9 is its layout, with multiple open kitchens. This is quite an interactive experience as you can be seated anywhere in the massive restaurant and interact with, say, the Western, Thai or Japanese chefs behind the counter. The restaurant offers set menus for lunch as well as a separate Japanese menu. I chose to stick to the Asian menu and my meal comprised of a platter of salmon and tuna sushi. This was followed with a three-course set lunch with
options from the Thai kitchen — a Thai-style grilled eggplant preparation, followed by a Thai green curry — with sustainable fish balls and a platter of fresh fruit to end the meal.

Verdict: The Japanese and Thai fare served here is exceptional.
