Marriott chefs to get Italian masterclass

Chefs of Marriott properties throughout the UK are to be trained in the art of preparing the perfect Italian dishes by culinarian Silvia Maccari (pictured).

Over 60 chefs will take part in seven regional training sessions led by Silvia, designed to teach them how to prepare fresh pasta and risotto dishes including Tagliolini con Zucchini e Capesante al Pepe Rosa, Risotto con la Zucca and Rigatoni alla Pastora.

The aim is for each chef to pass on the skills to colleagues at individual hotels, and once the training has been completed a new Italian menu and wine pairing will be offered to Marriott diners.

The initiative forms part of Marriott’s “CookSmart” programme that teaches “the fundamental basic principles needed to produce great food”, with chefs carrying CookSmart cards that can be used a reference tool. Other initiatives include “boot camps” in Italy for general managers, and motivational talks from the likes of Mark Hix and Chris Galvin.
