Personally I would stick to Saigon and find yourself a good hotel with food in the heart of the city. There is much to see and do in the city and so many famous landmarks for those of a certain age and who watched the end of conflict play out on TV news broadcasts.
The tunnels are accessible from Saigon and the kids love it
