*****UPDATE: The bar has opened ahead of originally scheduled, on June 15, 2023.*****
Plaza Premium Group is to open a new bar at Hong Kong International airport later this month.
Intervals will be located on the recently-opened, 200-metre long Skybridge which enables travellers to connect between the airport’s Terminal 1 and its satellite concourse T1S.
The bar’s concept has been inspired “by the idea that the time of day becomes fluid while travelling, and that instead key actions are measured in intervals of time – whether it’s how long it takes to clear security, the transit time, the time it takes to get to the gate, or the time between boarding time and final call”.
Design elements include references to traditional timekeeping devices such as pendulums, sundials, and hourglasses.

The bar will offer a range of “miniature sips” or “cocktail flights”, including a 15-minute flight of two cocktails – To Dream, made with tequila, chamomile-vanilla tea, bianco vermouth, and sparkling wine; and To Wake, a blend of nitro-brewed coffee, cognac, and topped with a
tofu-hazelnut cream.
Four and six-cocktail flights will also be available for those with more time, and the bar will serve tapas-style bar snacks including Hong Kong prawn toast with sakura shrimp, and mini taco with glazed turkey meatballs.
For those with no time to sit down at the bar there will also be custom takeaway boxes of cocktails and pinchos designed for on-board dining.
Plaza Premium Group will be better known to readers as the operator of the Plaza Premium Lounge network, which recently signed an agreement to return to the Priority Pass network.
Commenting on the news Plaza Premium Group’s Mei Mei Song, said:
“To celebrate our 25th anniversary, we wanted to create something unique with Intervals that makes the airport experience a part of the journey that travellers look forward to.
“Airports have transformed their retail and meal offerings tremendously over the years – and yet a sophisticated cocktail bar that is a destination in and of itself has not been done yet.
“This project takes a different spin from anything we’ve done before, and bringing on Victoria [founder of Hong Kong bar The Woods] means we are creating a category-defining experience that is beyond drinks, driven by her creative vision.”
