Passengers in LATAM’s premium business cabin can now enjoy a new inflight menu, featuring Latin American specialities.
Designed by chef Felipe Gutierrez, the menu features local ingredients such as fish and shellfish from the Pacific Ocean, tropical fruits, and seasonings and tubers from Latin American regions.
Options will vary by month and by departure point, referencing the local flavours of each country.
Highlighted dinner mains include the Chilean-inspired cognac chicken in sauce with sweet potato, courgette and roasted tomatoes; Peruvian grilled chicken thigh with hot huancaína sauce, ollucos cake, and grilled vegetable sticks; and Brazilian dish of baiao de dois (rice and beans) with seafood, designed in collaboration with chef Nara Amaral.
Breakfast options, meanwhile, include the Peruvian pan con chicharrón (pork bacon sandwich) with fried sweet potatoes and mayonnaise, and Brazilian pancakes with banana, salted caramel sauce, vanilla sauce and cashews.
The dishes will be accompanied by a selection of wines by sommelier Hector Vergara, who reviewed more than 500 wines before settling on the pairings.
