To commemorate their 45th anniversary, The Park Lane Hong Kong, a Pullman Hotel is hosting an exclusive WEISS chocolate dinner at SKYE, their popular F&B outlet. SKYE has collaborated with La Chocolaterie Weiss for this special menu, available from December 1 to December 30, 2019.
Eight different grades of cocoa will be seen across five courses, as well as two pralines and an exclusive to Park Lane blended tea will also be available.
Guests will be able to savour artisanal cocoa items from France blended with SKYE’s fine French fare. The menu features cacao duck dim sum; rougie foie gras; cocoa nib roulade and steamed john dory bonne femme (cocoa butter-poached plantin morels, white chocolate emulsion, black winter truffled Chinese cabbage) among others.
For main course, choose from cacao shell-roast iberico pork belly (smoked chocolate glaze, Chinese five-spice, organic green leaves, and roast parsnip puree) or smoked chocolate – braised shortrib of wagyu beef (roast leek puree, heirloom baby carrots, and salted egg yolk crispy short rib).
Conclude your meal with some sesame praline feuilletine mochi (salted caramel sauce, dark chocolate ice cream, caramelised white chocolate) with Komele 70 per cent for a roasted note and Aneo 34 per cent for smooth and pure white chocolate taste.
