19 Jan 2015 by GrahamSmith

Hilton Brighton Metropole will undergo a £3.75 million renovation this year to mark its 125th anniversary, it has been announced.

The project will include the refurbishment of the hotel’s meeting rooms, and of 185 of its 340 guestrooms, and a new restaurant and spa.

The new Salt Room restaurant is due to open next month, while the spa will be rebranded as “Schmoo by the Sea” and is also set to open in February.

Sascha Koehler, Hilton Brighton Metropole’s general manager, said: “We are thrilled not only to be unveiling our renovation plans for the guest rooms but also to be sharing our plans to open The Salt Room restaurant later this month.

“The Salt Room will be a relaxed, informal, urban dining retreat with covered terrace seating and ocean views. The contemporary dining experience is the perfect complement to its sister restaurant,

The Coal Shed, and it will showcase the best of British food – with a particular focus on British fish and crustaceans cooked over a real charcoal oven.

“Our spa is also undergoing a radical transformation and will be rebranded as ‘Schmoo by the Sea’, with an opening planned for early February.”

The hotel recently renovated several banqueting and meeting rooms, providing improved facilities for business events, meetings and weddings.
