Mandarin Oriental Hyde Park to launch Dinner by Heston Blumenthal

London diners will be able to sample Heston Blumenthal’s first London eatery from early next year, and despite the name, the restaurant will also be open for lunch.

Dinner by Heston Blumenthal is replacing the hotel’s Foliage restaurant, and will feature “simple modern dishes, inspired by our historic gastronomic past and celebrating the very best of British produce”. 

The eatery will be headed up by Ashley Palmer-Watts, group executive chef at Blumenthal’s Fat Duck for eleven years, and according to the release both chefs have been “working with food historians and the British Library, researching our much celebrated British culinary history”, with the resulting dishes “inspired by recipes dating as far back as the 16th century”.

Examples of this include bergamot cured mackerel salad, slow cooked short rib of beef, and scallops with cucumber ketchup and peas.

Inspiration for the restaurant’s name has apparently come from the French origin of the word dinner (disner), which stood for breakfast, and evolved to mean the main meal of the day. To this end lunch will be served from midday to 2.30pm, with a three-course set menu costing £25, and dinner will run from 6.30pm to 10.30pm, from £55 for a three-course a la carte menu.

The restaurant’s design has been created by Adam D Tihany, with floor-to-ceiling windows between the kitchen and dining room, and a unique “pulley system modelled on a 16th century design for the Royal British Court’s kitchens resembling the craftsmanship of an oversized watch, mechanically rotating a spit over an open fire”.
