Lufthansa employs British "Star Chef"

Business and first class long-haul passengers with Lufthansa will soon be able to sample dishes created by Chris Staines, head chef of the Mandarin Oriental Hyde Park.

It’s the first time that the German carrier has employed a British chef to design in-flight meals under its “Star Chef” programme, with Staines also the youngest chef to take part at the age of 32.

Passengers travelling in first class during January and February will be able to sample starters such as rabbit terrine with english mustard sauce and cucumber relish, with main courses including British favourites like beef wellington and fish and chips. Business class travellers meanwhile can choose from dishes including fruity chicken salad with stilton cream and almonds, and beef stew with carrots, pickled pearl onions and beaten mashed potatoes.

Staines took over as head chef at Mandarin’s Foliage restaurant six years ago, and since then has retained the eatery’s Michelin star. He joins a list of “Star Chefs” employed by Lufthansa including France’s Paul Bocuse, Daniel Boulud from New York, and Germany’s three-Michelin Star chef Harald Wohlfahrt.

American Airlines recently employed Nottinghamshire-born Darren McGrady to design its new premium menus on flights between Europe and the US (see online news October 29).
