Business class travellers flying Air France long-haul from Paris Charles de Gaulle airport will be able to sample dining options from French celebrity chef Guy Martin’s new menu, starting June 1.
Dishes this month include “sautéed shrimp, pasta shells and zucchini caviar, coconut sauce enhanced by Espelette chilli pepper” (below) and “breast of duckling, and a fennel and mango compote” (above). The menu will be renewed twice a month for the benefit of frequent travellers, with the range initially on offer for eight months.
Guy Martin has had a decade’s involvement designing dishes for Air France’s first class cabin. He currently holds three Michelin stars at his restaurant in Paris, Le Grand Vefour. A representative from Air France tells us that at the end of the year a new, up-and-coming French chef's menu will be introduced.
This is not the first time Air France has employed the skills of a famous chef. Joël Robuchon created menus for the airline's premium cabins last year (see online news 02/12/2011).
