What astonishes me is why there is any demand at all for service industry outlets that offer - essentially - no service: the absence of human interaction to serve and assist. Why does anyone want to stay in such dismal circumstances??!

You are absolutely right about even short haul Economy. Sad fact of life (as with good hotels), is that Business class costs more and is preferred for some very good reasons, travelling with PLUs being one of them.
