Jimmer7ParticipantAs you specifically mentioned the laser show I’d probably go with the Aqua Bar mentioned in Anthony’s first link above.
However my first choice in HK is the open air rooftop bar at Wooloomooloo Prime which is popular with the expats. Ozone which is number one in the list is completely soulless imho.14 Jan 2016

canuckladParticipantI’d also personally recommend Aqua……
I’ve also been to Sevva ,which is good but it’s in Central not kowloon. You’re spoilt for choice though!
Another option is a harbour cruise, see below……

AisleSeatTravellerParticipantI’d recommend The Felix Bar (at The Peninsula) or Aqua (both already mentioned)

Or take the ferry from North Point to Hung Hom (and back) for an amazing view of the harbour lights. What used to be one of the abiding joys of flying into the erstwhile Kai Tak: seeing the lights on the island when arriving over the harbour/from the east.

ASEANTravellerParticipantOr try the Aqua Luna harbour cruise. But dress warmly as it may still be sub 20 degrees at the end of Feb. You won’t go wrong with Sevva or Felix, although note they are more cocktail as opposed to beer venues (don’t know how formal or casual you like your bars).

AlohaHonoluluParticipantSevva & Felix are nice but my usual is Club@28. 28/F, Crowne Plaza rooftop in Causeway Bay. http://www.cphongkong.com/eng/dining.php?channel=club

ParselTongueParticipantBetter still get a high level Harbourview room at the Intercontinental – we were able to see the laser show whilst relaxing in our room with room service.
